  7. Get 1 tbsp tomato paste
  8. Make ready 1 tbsp dried oregano
  9. Get 1 to 2 Bay leaves
  10. Get 1 tbsp red wine vinegar
  11. Get 3 tbsp dry white wine (choose a wine you like)
  12. Prepare 1 salt and pepper to taste (1-2 tsp each usually)
  13. Get 1 tsp + red pepper flakes (optional)
Instructions to make Basic Pasta/Pizza Sauce:
  1. Heat oil in 2-3 qt pot at med-hi. Add onions and garlic. Cook until onions become translucent. (approx 2-3 min)
  2. Add remaining ingredients and bring to boil momentarily then simmer covered. Stir occasionally. (45 min)
  3. Transfer sauce to blender or food processor and blend to desired consistency. (chunky sauce - a few good pulses; blend full speed if preferred smooth)
  4. NOTE Add diced bell peppers or different cheeses for different flavors of sauce
