The ingredients needed to make Rajma Chawal:
  1. Make ready 100 gm Rajma/kidney Beans
  2. Prepare to taste salt
  3. Get 1 pinch baking soda
  4. Prepare Whole spices to boil along with Rajma
  5. Make ready 1 bay leaf
  6. Take 2-3 cloves
  7. Get 1 big cardamom
  8. Prepare 1 inch cinnamon sticks
  9. Get 3-4 Black pepper powder

  11. Prepare 3-4 tbsp mustard oil /ghee
  12. Take 1/2 tsp Shahi jeera/cumin seeds
  13. Prepare 1 big sized onion finely chopped
  14. Take 1/2 cup tomato puree
  15. Take 1 tsp grated ginger
  16. Take 1 tsp grated garlic
  17. Get 2-3 chilies finely chopped
  18. Get 1/2 tsp turmeric powder
  19. Take 1-2 tsp red chilli powder
  20. Prepare 1/2 tsp roasted cumin powder
  21. Get 2 tsp rajma masala
  22. Make ready to taste salt
  23. Get 2 tsp coriander to garnish
Steps to make Rajma Chawal:
  1. Soak rajma for 7-8 hours. There after wraje will boil it in a pressure cooker. Add rajma along with all whole spices to the cooker. Add salt and a pinch of baking soda to this. Let's pressure cook this until 4-5 whistles then slower the flame and cook for further 15 min on a slow flame. This will ensure the rajma cooks perfectly.
  2. For gravy, add oil or ghee in a kadai. Add Shahi jeera and let it sputter. Add ginger, garlic, green chilli, and onion to this. saute well for 8-10 minutes until onion turns golden brown and starts leaving oil/ghee.
  3. Now add tomato puree to this. mix well for 2-3 min and get a good boil to this. add all dry spices - turmeric powder, chili powder, cumin powder, rajma powder and mix well.
  4. Add 2-3 tbsp of boiled rajma to this and mash it well. this will give a nice gravy texture. now add remaining rajma and add water from that. add salt to taste at this level. let it cover and cook for 10 min on a slow flame. garnish it with coriander. serve with jeera rice or lachcha paratha.
