- Get Ingredients to go in blender
- Get 3/4 teaspoon jeera (cumin seeds)
- Take to taste salt
- Take 3/4 teaspoon saunf (fennel seeds)
- Prepare 1-2 dried red chili
- Take 1 inch Cinnamon stick
- Take Ingredients to go in mixing bowl

- Get handful chopped pudina leaves (mint)
- Prepare 1 spring chopped curry leaves
- Take 2 tsp Coriander leaves chopped
- Make ready 1-2 chopped green chillies
- Prepare 1 teaspoon ginger garlic paste
- Prepare as needed oil for frying
Instructions to make Chana Dal Vada Masala Vada:
- Wash 1 cup chana dal several times until water runs clear. Soak it in water for 2 - 3 hours. Drain off and set aside. Make sure there is no water in the dal. Do not over soak.
- Make a slightly coarse powder from the ingredients in the blender jar. Set it aside.
- Drain the water from the dal. Take 2 tablespoons soaked dal and keep it aside with spice powder. To the same jar add rest of the soaked dal, 2 teaspoon salt and Pulse it several times to get a coarse mixture.
- In a mixing bowl add the ingredients mentioned above also add ground spices (masala) & dal that was set aside.
- Divide the mixture into portions. The easiest way to shape these chana dal vada is to take a small portion of the mixture, make it to a ball. Place it on the left palm, - flatten it, then reverse it on the fingers of right hand and drop in hot oil.
- On a medium flame, heat oil in a pan for deep frying. Gently slide the vadas one after the other. I fry about 3 in each batch. Do not disturb them after adding to the oil until they become firm. This may take about 2 mins depending on the flame.
- Later turn them to the other side and fry til golden and crisp on both the sides.
- Serve hot Chana Dal Vada with tomato ketchup or coriander mint chutney. Enjoieë..
