- Make ready 1/2 tsp Hing/Asafoetida

- Heat 4-5 tbsp oil in a pan. Add all the chopped veggies - Carrot, Cauliflower, beans and potatoes and begin to fry them. Fry them till they are cooked completely and golden from the edges.
- Then Fry Capsicum for 1-2 mins in another batch. If you don't want to fry, you can steam the veggies. Once this is done, take out the veggies in a separate bowl.
- In the same oil, add cumin seeds, asafoetida, green chillies and sauté for them for 1-2 mins. Now add bay leave. Stir. Add tomato paste, sauté till you see oil releasing from the sides. Add ginger paste. Mix it well.
- Add all the spices, stir well. Lower the flame and add 2 tbsp of curd, stir it well. Add or sprinkle some water to the gravy.
- Now add the fried veggies to this gravy. Add salt, paneer cubes. Mix it well. Cover the lid and let it cook for few seconds. Sabzi is ready.
- Serve hot with Chapati, Salad, Curd or Pickle.
