- Prepare To make gatta
- Get 1/2 cup gram flour
- Take 1/4 tsp turmeric
- Prepare 1/2 tsp chilli powder
- Take to taste Salt
- Take 1/4 tsp caromseeds
- Prepare 1 tbsp oil
- Prepare Oil for frying
Steps to make Rajasthani Shahi Gatta Pulao:
- Soak rice for 1/2 an hour
- In a plate take gram flour salt, turmericpd, chilli Powder, caromseeds and 1 TBS of oil mix well.
- If required add water and make a dough, give 10-15 mins rest.
- Take small balls and make a lengthy size pieces
- Boil water, once water starts boiling add prepared gatta
- Cook for 10 mins
- Once done, take it out
- Let it cool and cut into medium pieces
- Heat oil in a kadai add gatta and fry till golden colour, and remove.
- In another pan or kadai add oil, and ghee followed by whole garammasala, cashew nuts and raisins
- Add onion and cook till light brown colour
- Add ginger garlic paste and stir for seconds
- Add tomato puree and all the dry masalas.
- Cook till oil separates from gravy now add fried gatta mix ncook for 1 min.
- Add remaining water of gatta, let it cook(double amount of rice)
- Once start boiling add rice,lemon juice and mix gently
- Cook on high flame for 10 mins
- After 10 mins when water gets dry add coriander leaves and keep onlow flame for 5 mins.
- Shahi gatta pulao is ready to serve with Raita.
