I make kootu with whole lot of veggies. But i have never made a mixed veg kootu, few days back i decided to make this and guess what it taste so yummy. Recipe for Pudalangai Paal Kootu made with snake gourd and toor dal. The addition of milk gives a very nice creamy taste.

- Chop all the vegetables into equal sizes as shown.
- Boil 2 cup of water and to it add chopped chow chow (chayote squash) and radish. Add 3/4 teaspoon cumin to it. Let it cook for 5 minutes on medium heat.
- Vegetables should be cooked well and firm not mushy.
- Now add chopped pumpkin,snake gourd and bottle gourd to the boiling vegetables. Let it cook until all the vegetables are well cooked.
- In a mixer, grind grated coconut, green chillies and cumin to a fine paste. Add the coconut paste to the boiled vegetables.
- Add salt to taste and gently mix. Add full fat milk to it and let it cook for 4 to 5 minutes. Switch off the heat.
- In a pan add coconut oil on a medium heat. Add mustard seeds and cumin seeds and let it splutter. To it add chopped onion and dry chilli.Saute till Onion is translucent. Finally add curry leaves and add to the boiled Paal kootu. Gently mix the Paal kootu and transfer it to a serving dish.
