- Place garlic cloves in foil with some oil and place in oven at 350' f ….till it turns brown and soft like 40 min or so
- Now in a sauce pot saute the shallots and minced garlic till the onions are soft and glassy and then add the thyme
- Now add the wine and cook down till the liquid is reduced by half then add the cream and roasted garlic salt and pepper and reduce till thicken
- Now you can either blend everything and serve it that way or what I do is strain out the garlic and onions and set it a side
- Cool down and use for anything like Alfredo by adding parmesan cheese ..or adding blue cheese to it
