- Take 1/2 tsp Kasoori Methi

- Prepare 2 tbsp Green Coriander (Finely Chopped)

- Get For the Dough
- Take 1 & 1/2 cup Wheat Flour
- Prepare 3 tbsp Oil
- Take to Taste Salt

- Take Oil/Ghee to roast Paratha
Instructions to make Mix Veg With Paratha:
- First to make a gravy in the pressure cooker add roughly chopped tomatoes and Onions.In a small bowl take other ingredients for gravy like cashew nuts,melon seeds,peanut,cloves,cinnamon stick,garlic cloves,ginger,green chilli and put this bowl in the center of the pressure cooker. Add 1/2 cup water and pressure cook it for 4 whistle on low flame.
- Meanwhile in a nonstick panadd 1 tbsp Oil and add 1/2 tsp turmeric powder,1 tsp Kashmiri Red chilli powder,1 tsp Cumin coriander powder and add all the veggied and saute it on high flame until you get the golden colors on the veggies and keep it aside.
- Once the pressure cooker get cool down, make a separate paste of Cashew nuts and Tomato onion using the mixture.
- In a pan add 2 tbsp oil, add cumin seeds and let it crackle. Add Tomato onion puree and Cashew nut paste and let it cook until the Oil speerate from it.
- Add remaining cumin powder,red chilli,turmeric powder and kitchen king masala and give it a good mix. Now add all the veggies and mix well. Add 1 cup of water and let it simmer on low flame.
- Once you gravy become thick,add kasoori methi and cream to it. Your mix veg sabji is ready.
- For the Paratha, in a bowl add wheat flour,oil,Cumin seeds,Salt and knead a dough like Roti.
- Take a small portion from the dough and using the dry flour roll a 10 cm roti. Now Apply oil and some dry flour on it and make a triangle.
- Roll that triangle in a medium thick paratha. Heat a Tava and roast it on both the side using Oil/ghee until it become light brown.
- Serve it hot with Mix Veg,Onion and Roasted Papad.
