  2. Get 3 cups palm oil

Ofada rice and sauce is our traditional food in Nigeria, Ogun state to be precise It is usually eaten with this delicious sauce. Ofada rice is better eaten with a sauce. The most delicious sauce for the Ofada rice is known as Ayamase (also known as designer stew). I marveled the first time I saw someone preparing the sauce because until then, I never heard of it.

Steps to make Ofada rice and sauce:
  1. Properly wash the meat, spice and cook. Grind the all the pepper together with onions, pour in a pot and boil to dry into paste and set aside.
  2. When meat is cooked, cut into small pieces and set aside. Grind the crayfish and set aside.
  3. Put pot on fire, add the palm oil and allow to bleach. Cut onions. Add the onions to the bleached oil and fry till it turns slightly brown. Add the pepper paste and fry on moderately low heat. Fry till the paste start separating from the oil.
  4. Add the crayfish, iru,seasoning cubes,garlic,ginger,curry,thyme and stir. Add the meat together with the meat stock. Taste for salt and adjust if necessary. Allow to boil for 5-10mins.
  5. Drop the sauce. Put another put on fire with water. When it's boiling wash the rice and pour in to parboil. This will take roughly 7mins.
  6. Bring down the rice and wash while another water is on fire. Add salt to the water on fire. When boiling pour the washed rice to cook.
  7. Check if the water is dried. Drop if no water. Meal is ready.
  8. Serve the dinner.
