Jeera Rice (Zeera Rice or Cumin Rice) is a tempting rice dish of Punjabi cuisine. In its simplest form, it is a steamed rice with nice flavor of pan fried cumin seeds (Jeera). This simple and easy recipe also uses onion and cashew nuts stir fried in ghee to enhance the flavor and palatability. Dal fry is made with toor dal mostly (split pigeon peas), an easy to cook, comfort food that goes well with steamed rice and some have it with roti/ phulkas too.
Instructions to make Daal fry and jeera rice:
- Mix all daal,wash 3 times and soak for half hour with 4 cup water.Take pressure cooker add soaked daal,tomato, onion, green chillies, ginger,garlic,salt,turmeric powder and 2 bay leaves,cover lid of pressure cooker and cook daal for 5 whistle, when cool down mix properly
- Put coal on flame,when turn red hot take to small bowl with the help of tong,place bowl on daal add clarified butter and shahi jeera cover lid of pressure cooker for 10 minutes.
- Heat temper pan add clarified butter, cumin when splutter add dry chillies, red chilli powder,garam masala powder,asafoetida,coriander and mint leaves pour temper on daal,mix and cook for one boil.
- Wash rice and soak rice for half hour.Heat deep bottom pan add water and boil add rice,salt bay leaves and lemon juice. Cook for 10 minutes,strain excess water and cover lid for 5minutes. Heat temper pan add clarified butter and shahi when splutter pour to rice and mix gently.Garnish and serve

Chana dal fry -Split bengal gram cooked in tomato sauce and Indian spices. Chana daal is a very healthy and delicious lentil preparation. It is quite easy to make and goes well with rice, poori and roti's.
