- Get all the ingredients ready.
- Pressure cook the pumpkin pieces with water just enough to cover it for 2-3 whistles with the slit green chilli, half of the crushed garlic, some salt and turmeric.
- Once pumpkin is cooked, remove from the pressure cooker off the flame and mash the pieces and mix well.
- Now for the seasoning, in a small pan, heat vegetable oil and splutter mustard and cumin seeds along with curry leaves. Add the crushed ginger, shallots and the remaining crushed garlic cloves and fry along with some salt, a pinch of turmeric and red chilly powder (optional because we have already added 1 green chilli).
- Add the seasoning to the cooked pumpkin gravy and boil till the excess water dries up and we get a not too loose-not too thick curry. Add in the coriander leaves too and serve hot. Goes with rice and rotis. A more popular kerala version of this dish is done with coconut. To do that, just replace the oil with coconut oil and you can avoid the cumin seeds and coriander leaves.
