I didn't give a serious thought until the little one started tasting and liking chicken. Its Friday woohoo! :-) and the best part is I am sitting in my parents place and typing the post. The scene on the background is Amma making my favorite Sankara Meen Varuval. It's a simple fried chicken recipe with plenty of spices and Chinese.

Steps to make Chicken 65:
  1. Wash chicken under running water. Marinate it with marination ingredients. Set arise for at least 45 minutes. Overnight yields the best soft chicken.
  2. Make the seasoning mixture. Add red chilli powder, sugar, garlic paste, salt vinegar with 2 tbsp of water. Set this aside.
  3. Sprinkle the dry flour over the marinated chicken. Pour the egg. Mix well. If needed sprinkle little water for a good binding.
  4. Heat oil in a deep pan until hot enough to fry the chicken, fry till they are cooked fully and golden. Drain them on a kitchen tissue.
  5. Heat the pan with 1 tbsp of oil, add curry leaves, green chillies and cumin, fry till the leaves turn crisp.  You can set aside for garnishing.
  6. Add the seasoning mixture, we prepared above and let it boil.
  7. Add the fried chicken and toss and fry on medium heat till the chicken adsorbs all the moisture and the raw smell of garlic disappears. Serve with onion wedges.
