  1. Get 1 capsicum
  2. Make ready 1 onion
  3. Take 50 grams beans
  4. Prepare 50 grams carrot
  5. Take 2 garlic cloves
  6. Take 200 gms noodles
  7. Get as required Red chilli sauce
  8. Prepare as required Green chilli sauce
  9. Get as required Soya sauce
  10. Make ready as required Tomato sauce
  11. Get As per taste Black pepper
  12. Get as required White vinegar
Steps to make Homemade Vegetable Noodles:
  1. Boil 750ml water, after it boils add one teaspoon salt and 2 teaspoons oil.
  2. When it boils again add all the noodles, leave it for 3-4 mins and check if the noodles become soft.
  3. Drain the water and put noodles under cold water to stop the cooking, add a little bit more oil and spread it on it noodles.
  4. Now take a wok, heat it and add two tablespoons of oil.
  5. Add sliced garlic cloves into long and thin strips when the oil heats up then sauté it for a few seconds then add sliced onions
  6. Sauté again till the onions become translucent and then add all the remaining vegetables sliced into thin strips and 1.5 teaspoons of salt and sauté and cover for 5-7 minutes.
  7. After the vegetables become slightly crunchy and then add all the sauces, white vinegar 1 teaspoon, soya sauce 1.5 teaspoon, red and green chilli sauce 1 tablespoon, 1 teaspoon tomato sauce and 1/2 teaspoon black pepper.
  8. Toss the vegetables in the sauce for a few seconds and then add noodles and mix well and let it cook for 2-3 minutes.
  9. Ready to serve!
