Enduri is mostly prepared during Prathamastami and Manabasa Gurubara. What makes these "Enduri pitha" special is the steaming technique. These are steamed in fresh turmeric leaves. Enduri Pitha is a variety of Pitha traditionally prepared in the state of Orissa, India during the occasion of Prathamastami.

Steps to make Enduri pitha and Kakera:
  1. Method for ENDURI PITHA: First prepare the stuffing part:
  2. In a kadhai warm ghee, add Jaggery powder and water. Cook till Jaggery powder melts and mix properly. Now add grated coconut, cardamom powder, black pepper powder and mix well. Cook till the mixture dries up. Remove and keep aside
  3. Now making the pitha: Prepare a smooth batter by grinding soaked rice and urad dal.
  4. Now take a haldi leaf, pour one laddle full of batter on it, add coconut filling. Now flip and join both the vertical ends.
  5. Do likewise with rest and steam it using a steamer for about 15 mins.
  6. Remove, let it cool down and then serve.
  7. Method for kakera pitha
  8. Prepare the filling as mentioned in filling section of Enduri pitha.
  9. Now outer covering part:
  10. In a kadhai add water, pinch of salt, saunf, black pepper powder, cardamom powder, Jaggery powder, ghee and let it boil.
  11. Now add sooji and mix well in slow flame till the mixture dries up.
  12. Remove and let it cool (not fully just the mixture should be slightly cool down so that kneading can be easy)
  13. After slightly cooled, using Palm knead into a smooth dough. Now make medium size balls out of the dough and keep aside. Your raw sooji balls are ready.
  14. You can make plain or coconut filled Kakera.
  15. For plain Kakera, take that raw sooji ball and press it lightly so that the thickness be of medium size. Now keep aside in a tray
  16. For coconut filled Kakera: Take the raw sooji ball, press it deep and put coconut filling in the middle of it. Brush water to all the ends and slowly slowly seal the ends. Coconut filled Kakera is now ready
  17. Now in hot oil, deep fry the plain and coconut filled Kakera. Serve hot.

It is a type of rice flour and cheese cake dish which has been a part of the traditional Oriya festivities. Enduri Pitha is traditionally prepared with turmeric leaves, black gram, rice flour. Serve the pitha with ghee/sugar or dalma. Sada enduri ( without the sweet stuffing ) is very popular with Mutton Jholo or Mutton Kasa. Cover with a concave lid and steam till done.
