Instructions to make Chicken Brine:
  1. Get your water boiling and add sugars, vinegar, peppercorns and salt. Let them cook and dissolve. Stirring the pot occasionally. Once dissolved, cut the heat and add all the herbs to seep like a tea and let the brine cool down. Add your Chicken and let it sit for a minimum of four to eight hours. I'm letting this sit for twelve hours…And it's for fifteen pounds of Chicken quarters and thighs.
