The ingredients needed to make Hot Salsa:
  1. Get 7 lb Fresh tomatoes(approximately 22 medium)
  2. Prepare 3 each Green peppers
  3. Take 12 each Jalapeño peppers
  4. Prepare 1 cup Chopped cilantro
  5. Prepare 4 each Large sweet onions
  6. Make ready 3 tbsp Lime juice
  7. Prepare 1/2 cup Salt
  8. Get 1 cup Sugar
  9. Prepare 4 tsp Minced garlic
  10. Prepare 1 cup Apple cider vinegar
  11. Get 4 each Habanero peppers( if you like it really hot!)
Instructions to make Hot Salsa:
  1. Chop onions, cilantro, green peppers, jalepeno peppers, and the habanero peppers if you are adding them.
  2. Blanch the tomatoes in hot water( approximately 150 degrees) for 3 minutes. Transfer to a cold water bath.
  3. Core and peel the tomatoes and run them through a salsa strainer.
  4. Pour the strained tomatoes into a large pot and add all of the other ingredients.
  5. Stir well and bring to a boil. Transfer the mixture to jars while hot for sealing. Add lids and tighten bands firmly. Jars will seal as salsa cools.
  6. Makes approximately 12 pint jars.
