Thandai is a very refreshing spicy cold drink with aromatic flavors; main ingredients are almond, milk, sugar and some spices. Traditionally thandai is served during the Indian holiday "Holi". A soufflé is a classic French dessert that is rich, creamy and unbelievably light.
Instructions to make Thandai souffle:
- Soak almonds,black pepper,fennel seeds,khus-khus in warm water for 2 hrs.
- Blanch the almonds and drain the water.
- Dissolve the saffron in little warm water.
- Mix all the ingredients and grind to fine paste using rose water.
- Keep paste aside for later use.
- Dissolve agar-agar in 1/2 Cup of water and bring to boil.
- In another pan boil milk with sugar.
- Add agar-agar mixture to milk.
- Now add thandai paste to milk and agar -agar mixture.
- Keep aside to cool down.
- Meanwhile whisk the cream till soft peaks formed and fold it into milk mixture.
- Pour into serving glasses and refrigerated for 4-6hrs or till the souffle sets.
- Served chilled,garnished with sliced almonds and few strands of saffron.
