Steps to make Vegetable Jalfrezi:
  1. Roughly chop all the vegetables and dice paneer into big cubes.Finely chop onion and tomatoes.
  2. Heat 1 tbsp oil in a heavy bottomed pan and add paneer cubes to it.Shallow fry till golden brown.Transfer to a plate and Keep aside.
  3. Again heat a pan and add 1 tbsp oil to it.Add cumin powder.Add onion and saute for a minute.Add grated ginger,garlic and green chillies and the spices.Keep stirring and cook till onion becomes golden brown.Add salt.Now add the tomatoes and cook till tomatoes become mushy.
  4. Now add all the vegetables and mix well.Cover with a lid and cook on low to medium flame till the veggies are almost 80 percent cooked.
  5. Add paneer cubes and kasuri methi and again cook for about 5-7 minutes so that paneer absorbs all the flavours.Transfer to a serving bowl and serve hot with chapati or naan.
