Lauki or Lau (in Bangladesh) or Bottle Gourd is mostly available in tropical countries. If you live in the West like me you can only purchase Lauki from Indian or Desi grocery stores. Best to make soup, light curry, raita, bhaji (stir fry), achar (pickle), or kofta (vegetable balls) using lauki. These kofta are not deep fried but pan fried in a kuzhi paniyaram pan and has a lip smacking curry too.
Instructions to make Bottle gourd fry / Lauki:
- First peel off the gourd then wash it and cut it in small pieces.
- Now heat up a pan with oil add cumin powder crackle it then add green chilli sauté it.
- Now add chopped gourd, salt and turmeric powder mix it cover and cook for 15 minutes on medium flame.
- After that open the lid and cook it on high flame to remove any excess water.
- Turn off the flame.
- Our simple healthy bottle gourd fry is ready.

Serve these with hot phulka topped with ghee To begin making the Lauki Kofta Recipe, first prep all the ingredients and keep them ready. Peel and grate the bottle gourd and squeeze out the excess.
