The ingredients needed to make Shahi Firni:
  1. Take 1/4 cup Basmati Rice / Gobindovog rice powder
  2. Make ready 1 litre full cream Milk (at room temperature)
  3. Get Cinnamon 1" piece
  4. Get Cardamom 3/4 no (crushed / powdered)
  5. Prepare Sugar 3/4 cup or as per taste
  6. Get 1 pinch Salt
  7. Make ready 1 tbs Ghee / clarified butter
  8. Make ready Cashew nut paste of 15 cashews
  9. Get 1/2 drops Kewra water
  10. Prepare 1 drop Rose water
  11. Get 1 drop Yellow food colour
  12. Make ready Kesar / saffron 9/10 threads (soaked in milk)
  13. Get 1 tsp Cornflour
  14. Prepare 3 tsp Milk powder
  15. Get Dry fruits almond -10-12 (sliced), cashews 10, raisins 10/12 (soaked in water)
  16. Get Terracotta bowls or ceramic bowls 4 no
Instructions to make Shahi Firni:
  1. First wash the terracotta bowls with water, drain and dry
  2. Take out 1 cup of milk in a bowl and mix the rice powder in it very well. The milk must be at the room temperature.
  3. Boil the rest of the milk with the cinnamon
  4. When it's a little thick add the milk rice powder mixture to it and stir constantly so that no lumps form
  5. Add food colour and boil the rice
  6. When the rice is boiled and soft, add sugar, mix well and dissolve it, stir constantly
  7. Keep heating to thicken the milk some more, take some milk out of the pan and mix the cornflour and milk powder in it very well that no lumps form
  8. Add the separated milk mixture to the pan and mix everything very well
  9. Add Cashew paste to it and mix well
  10. Add ghee, kewra water, rose water, kesar and cardamom to it, cover it with a lid over low flame.
  11. Then add the dry fruits and mix
  12. Cook for 4/5 mins over low flame
  13. When it's neither too runny nor too stiff, turn off the heat, pour the mixture in the terracotta bowls, cool down to the room temperature and keep them in the fridge for 2-3 hrs.
