A Soboro Don (short for Donburi- rice bowl), in its simplest form, is a minced chicken bowl with a few possible garnishes. It is generally paired with scrambled eggs (iritamago, 炒り卵), side by side, and often with a green vegetable to make a Three Color Soboro Don (三色そぼろ丼). Ladle cooked Japanese rice into three bowls. Top the rice with soboro, egg and scallions.

  1. Put ground chicken meat, soy sauce, sake, mirin, sugar, grated ginger in a pan and mix well. (using 2~3 chopsticks) - When mixed well, put on fire. Cook with constant stirring.
  2. When the meat is cooked and fluffy, cook until the water is almost gone.
  3. Break eggs into a bowl, add sugar and salt and mix well. Heat the salad oil in a pan, add the egg mixture and stir constantly to make a fine scrambled egg.
  4. Boil the green beans and slice them diagonally.
  5. Now you have three items.
  6. Place rice in a bowl and decorate three items and red ginger on top of it.
  7. I used green beans, but I think green soybeans (edamame) and green peas can be used instead.
  8. You can make it cute by decorating the rice with milk pack like celkle.

You can buy ground chicken to make soboro. Note, though, that because there is very little oil involved in the cooking, ground skinless chicken breast meat will be. Chicken Soboro Donburi usually has cooked ground chicken, scrambled eggs, and some green vegetables. It tastes good of course but also looks colorful and beautiful. You can often find Chicken Soboro Don at Udon restaurants in Japan just like Oyakodon, but not always.
