First time I heard about and also had lauki ke kofte at my in-law's home. I had never heard nor knew that a curry is made from bottle gourd.
Steps to make Lauki kofta curry (bottle gourd):
- Rinse peel and grate the lauki. Soak moong dal for 10 mins. In a mixer grinder grind the soaked moong dal coarsely and keep aside.
- In a mixing bowl add the grated lauki along with grinned moong dal (no need to squeeze the water from the lauki) To this add 1 chopped onion 1/2 tsp ginger garlic paste, turmeric powder red chilli powder and salt.
- Mix the mixture properly and make small round shape balls.
- Heat oil in a kadai and fry the kofta in the oil till they are golden brown from all the sides. Frying must be done on a medium flame Drain the fried lauki kofta in a tissue kitchen towel.
- Heat 2 tbsp oil in a pan to this add bay leaf cinnamon cardamom cumin seeds and sauté for a second.Now add chopped onion and sauté till it gets translucent.To this add ginger garlic paste and cook for a min
- Now add turmeric powder coriander powder and Kashmiri red chilli powder. Cook the masala for 4 mins or till the oil starts separating. Now add garam masala and salt
- Now add 1 cup water to make the gravy. Cover with the lid and cook further for some mins to get the desired consistency.
- Now it’s time to add the fried lauki ke kofte into the gravy. Cook for a min and switch off the burner.
- Lauki kofta curry is ready to serve. This kofta goes well with paratha nan and rice
