  1. Get 5 grams Gelatin powder
  2. Prepare 2 tbsp Water
  3. Prepare 200 grams Melon

  6. Make ready 50 grams Plain yoghurt
  7. Get 100 grams ★Heavy cream
  8. Prepare 10 grams ★Granulated sugar
Steps to make Melon Mousse:
  1. Dissolve the gelatin in water in a double boiler.
  2. Purée the melon in a blender or food processor, and mix in the lemon juice and granulated sugar.
  3. Add the yoghurt and mix well.
  4. Add the gelatin from Step 1, and mix well until until it thickens, then leave it to cool.
  5. Add the granulated sugar marked ★ to the heavy cream, and whip until soft peaks form. Stir it into the bowl from Step 4 in 2-3 batches.
  6. Pour the mixture into the mousse cups and leave in the fridge to harden.
  7. Top with chopped melon and mint to finish.
